I'm not sure I understand the question. You want to book a lower rate for the second night that doesn't include breakfast?

Otherwise, if you're on a rate that includes breakfast, that doesn't mean you "have" to show up for it. Lots of people don't, for whatever reason. No notification to the property needed.
