Having a train be "full" is something you do not need to plan around, at all.
In peak seasons (Easter, summer, etc) you most certainly do need to plan. We were extremely thankful that we bought our Rome-Florence and Florence-Venice tickets in advance when we were traveling around Easter a couple of years ago. Those trains were FULL.
