I wonder what would happen if you departed in that manner, went to, say, the Far East, then came back directly to the US and used an airport port of entry? From what others have said, they might have a record of your entry into some of the other countries, but no departure record from the US. I would imagine if they said anything, it would be a matter of a simple question to see if you could explain it. Also, you'd have to have Mexico listed on your Customs declaration under "countries visited" in order for it to be truthful.
