To be honest when there is an incident, you will be able to hear most things regardless of headphones or no headphones.
Aah I'd forgotten about the back of the plane. If you were wearing the combination I normally use you would't hear anything as I have earplugs in and my Sony NC headphones on. Some people use noise isolating headphones, 'Shure' being the most popular name mentioned which again would limit your ability to hear instructions.
