Purchasing a seat in one of the childs names seems like it would work (and then having to pay for the E+ upgrade).
AFAIK, you cannot have two lap infants in a row of three seats (there is only one extra oxygen mask per set). So buy one of the kids a ticket.
If you use one of the kids as the passenger you will be able to accumulate lifetime miles and maybe status if the kid flies enough (or you can gift 3P). If you are all going to keep flying, the kids will need tickets after age 2 anyway so one of them can get a head start on earning some miles.
