I could of course have been re-routed from other places in the US, at an earlier date, but opted not to do this as there was such a high chance those flights would not be operating. In the end it looks like I made a wise decision.

You are entitled to claim 8 nights accommodation and meals together with transfer from hotel to airport (so long as you have receipts) from the airline. There is no upper limit on these expenses so long as they are reasonable. You won't be able to claim back in room movie costs or any bar bills IMO.

So long as you submit copies of receipts to the airline together with a clear and unambiguous letter setting out your claim, you should receive these within a few weeks. Send the letter special delivery to ensure its receipt and ability to get a signature for such receipt.
