Absolutely go for the 2-1-2 arrangement. The 2-1-2 configured 767s (i.e., the 3-class) have flat-folding, "pod" sleeper seats, and an F cabin radically different (to be kind) from the 2-class 767. Let's put it this way: As a general rule, the 3-class 767s are used on international and flagship transcon routes; the 2-class are used to haul lots of vacationers travelling on award tickets and/or dirt-cheap advance-purchase fares to Hawaii.

here, although a search using "Hawaii 767" ought to provide more than enough advice against ever booking on one. Bottom line? Avoid the 2-class like the plague.
F seating on AA's domestic fleet (757, 738, S80) is nothing to write home about. Sure, there's a little more seat width and pitch (nothing close to even a business class seat on a 763 or 777, though), but service is pretty average. It really isn't a "first class" product, per se; it's more like a "Whaddya want, it's better than sitting back in coach" product. Seating is all 2-2, and there's really no big difference among the various aircraft (save for the "old" style, all-leather, no-moveable-headrest seats on the 757, which I prefer but others abhor). Don't know how tall you are, but I'm 6'0 and try to avoid bulkhead seats (first row) at all costs, especially on the S80.
