It would likely be a profitable business: $100 is what that person would usually earn in 8h (+ very few tips), upgrading one person per week certainly wouldnīt be too suspicious and would be an additional $5k per year.
It would also be profitable for a bartender to simply pocket one out of 10 drinks they make for himself. It is dishonest and grounds for dismissal.
