Ref your first paragraph, I did just this when booking my trip to MIA, with flights being so popular, it was important to secure the outbound as soon as it became available. I then changed the return about 3 weeks later. These transactions can be done online foc, provided that the travel class remains the same and I believe the route. I booked seats in F, intending to change to J, when available, but this didn't happen, but in theory I could change this anytime, but I would then have to pay the amendment fee, doing the change by phone.

Ref cancellations, I believe one can cancel and get miles refunded.
