Not sure about the 3rd person, but you should not have any problem booking for family. I would just prepare them for the check in and tell them to stay low key. If I'm ever concerned, I just contact the hotel on day of arrival and tell them the other folks will be "checking in first."
Why put the 3rd person on the room? As long as your Mom and Dad are together at the property and wouldn't need to recharge a room key separately, just keep it 2 persons - you and one of them.
+1. Have their names either added to the reservation or put their names in the comments. I've never had issues like this, but will agree to tell them to keep low.
I'd minimize number of other people's names on the reservation.
