Western Iceland is all clear, so I would imagine they're skimming along the Mediterranean, then taking a more northerly track toward Iceland and Greenland once they get around Spain in order to satisfy ETOPS. The ash cloud isn't much west of the British Isles. Come to think of it, the Azores might be able to satisfy ETOPS requirements alone. Planes fly MIA to Europe all the time with no issue.
