My question: Is there a way to avoid paying what is asked? For example, if the ATL-CDG is asking 125K SM, is there some way to find a "cheaper" route?

If DL itineraries are pricing crazily for a flight to CDG, i'd try leaving from an AF gateway, such as IAD or IAH and then try to get a low level domestic ticket to get you to the gateway (which will be the hardest part). AF availability is always at the low level, so if its there and you can get to the gateway in low level, it should price at 100k for BE.
