Some deciding factors would be the quality of the airport hotel and the distance to the city.

Will we get free transportation to and from the city if we choose to stay at the airport hotel?

The Airport Hotel is a good choice for resting and refreshing before connecting to another flight and is a pretty decent place to stay

However as you have plenty of time I would stay in Taksim or in Sultanahmet to get a better feel of wonderful Istanbul

However keep in mind to depart for the Airport before 4pm
