It probably wasn't served in the mimosa offered for the pre-departure drink. My understanding is that most carriers use a different, usually cheaper sparkler (like a cava or prosecco) on the ground. This is due to the fact that the wines served in the air are duty-free and can't legally be served when on the ground.
BA will serve you any of the wines on the regular F menu on the ground. Same with CX. My experience on SQ is it is either Krug or Dom.
