I'd do sightseeing along the river, such as the Palace, the Royal Barge Museum, the temple on the far side of the river. I'd use both the river boat, super cheap and used by locals, as well as hire a private boat to go thru the klongs.

For shopping, I like the Paragon because it's got AC and has local products on the top floor.
