No.

I have a meeting at 10 and a lunch at 12, and I was wondering if I could just walk into a casino, spend like 15-20 minutes playing blackjack and just walk out and make it to my lunch.
Easily.

Will there be a line to get into the casinos/is it hard to get a seat at a table before noon on a weekday?
Nope and nope.

If I have to wait in line and have them spend 5 minutes looking at my ID and trying to figure out why the picture looks like my younger brother its not worth it to go over there. Anyone have any experience, or suggestions? I want it to be empty enough where I can walk in and find a seat within 1-2 minutes, but not so empty that I have to say "hi, no, i don't need any help" to 30 people on my way in.
Enjoy your time in Vegas. You won't be hassled, unless you look 14.
