I really like that you have Chile on your list. I went there in 2007 for my college graduation present and I think it's a vastly underrated country. I found it to be much cleaner with friendlier people and a more safe feel than Brazil. As to where to stay, I wouldn't know where to stay for a full month, I was at the Grand Hyatt which was quite nice.
