You can definitely switch. FAs don't care who is in the seat as long as nobody complains -- save for an extra FC passenger if the seat is supposed to be empty. They will have the manifest for FC (name/status), but doubt they will ever look at it, and even if they do they are unlikely to care or notice.
I assume you know about the companion upgrade program... but obviously it doesn't always work that easily (different PNRs, one seat available, traveling with kids, etc.).
