I agree with everything kingalien said - Palms or Hard Rock would be superior, but out of your choices go with Caesars.

If the groom wants to go see the Bellagio and enjoy the fountain show, tell him you can set aside an evening for that. But for everything else I think Bellagio is more low-key than you are looking for.
