Maps! During a delay a few years ago a BA pilot showed me the massive book of maps they keep for airports around the world (remember even if an airline doesn't serve an airport it might be used in an emergency landing or diversion). And the taxiways have identifiers that ATC tell them to use so it's as simple as that AFAIK!
