Calling it fusion is probably over-simplifying, but Tetsuya's in Sydney has got to be one of the great restaurants of the world. The blend of east and west both in flavor and technique is nothing short of breathtaking.

Since there has been some talk of pātisseries, if you're in Paris, you can't miss Aoki. Perfectly executed French pastries with flavors that go from green tea to azuki bean. And each cake is a work of art. Not to be missed.
