I haven't stayed at a lot of Fairmont properties like most of you do. But here is my take based on limited experience:

Best: Comped a free night in a 2000 sq ft Penthouse suite due to a previous screwup. Great service makes us want to return, although there are a lot of competing hotels in SIN.

Worst: At Vancouver waterfront. We used a suite upgrade cert and they gave us a harborview small junior suite that doesn't really have harbor view because it was on the 4th floor. We arrived late and we didn't realize this until the next morning. Well, it was too late to complain because we were going to check out the next day anyways. And, the restaurant at Vancouver waterfront didn't appear to be clean. We sat by the window and we could see dust bunnies in the grilles of the HVAC ducts right next to our seats. We didn't complain because, again, the meal was free (comped by Amex FHR) and the meal was okay. Well, next time in YVR, we'll try out the Fairmont Pacific Rim.
