My final destination is a bicycle trip that starts/ends in Marakeech, but thought I might have to transit via Casablanca (since most international flights appear to operate out CMN) and perhaps stopover for a day or so, while I'm there.

If you're 3P or higher and flying in Y, you might want to maximize your time on UA metal for the E+ factor. If you're not, then forget about UA and pick a European carrier with better AVOD/food.
Also, keep in mind that on April 27, 2010, the redemption rates for northern Africa go down a bit.
