Yes, you will take a red urban taxi to Nathan Hotel.

You may also consider the Airport Express train to Kowloon Station and hire a taxi from there. Unfortunately, Nathan Hotel is not serviced by the shuttle buses from the train station. If more than one of you are travelling together, a discount is offered on the Airport Express train.

A cheaper alternative will be the A21 Cityflyer bus. Alight at Stop #10 (i.e., the 9th stop) outside 348 Nathan Road. A short walk to Nathan Hotel at 378 Nathan Road. Stops are announced in Chinese and English. Fare HK$33 per person. Cash or Octopus card only.
Looks like last train leaves HKG at 00:48 and I should be able to catch that without a problem. Once I arrive at Kowloon Station will it be easy to catch a taxi that late at night?

I saw they offer the Airport Express Travel Pass and it looks perfect for me. I will be in the city for 3 days, the 4th day I head back to airport. This looks like the best deal for my visit. Does this seem right, would there be any better options?

HK$300 – Pre-programmed with 2 single Airport Express journeys and 3 days of unlimited travel on MTR (except Airport Express, East Rail Line First Class, Lo Wu and Lok Ma Chau stations).
Ticket is restricted to tourists who are non-Hong Kong residents and have stayed in Hong Kong for less than 14 days.
