- ohmi beef tataki/with white truffle $89/$120 (pictured)
- white truffle sushi [piece] $75
- masa toro with caviar [roll] $240 [masa toro toro roll $68]

at palazzo, cut's japanese wagyu runs ~$23 per ounce (ribeye/NY sirloin)
at wynn, bartolotta's seafood entrees run ~$5-$7 per ounce (whole fish/lobster)

interestingly, 2nd author is negative on gagnaire paris, but positive on twist

and from 1st author on twist >
...Service is more relaxed than it would be in Paris...

...tasting menu runs six courses without being as overwhelming as his menu in Paris, where each course bristles with five or six side dishes. This food is much less elaborate, much more approachable...
