If there are enough meals onboard, an upgraded ML*1/SE will fall into the priority pecking order.

If there are insufficient meals, it will be confirmed verbally by the gate agent and usually **possible no meal** will be written on the boarding card and/or manifest. In this case an upgraded customer where a meal shortage exists (regardless of status) will not trump a revenue booked customer in the J/C cabin. That would seem fair. It's more of an issue with flights which are double-catered from Canada. The morning flight from SEA is catered locally, and every attempt will be made to secure an extra meal.

As always, if meal choice is a burning priority, I have absolutely no issue with a customer asking if at all possible, could "A" or "B" be put aside...
I just want to add something to this...

I was scheduled to fly LAX-YVR-YYZ. we found out while in LAX that our YVR-YYZ flight was delayed 5 hours ( It was coming in from asia somewhere) so after speaking to the ML agent and AC res they agreed to put me and my partner on the LAX-YYZ direct flight. Only problem was the direct flight leaves in 30 minutes! They quickly got my luggage, re tagged it and issued my BP. when I boarded I was in 1D, I hear the gate agent tell the Flight Attendant that there will be no meal loaded for me as there wasn't enough time, and to inform me. It seemed the FA didn't want to tell me ( Possibly because she was afraid I'd get upset?) So she asked her male co-worker to tell me. he advised me no meal was loaded and I wouldn't be able to eat. I didn't fuss and said okay. He asked if I was upgraded at the gate, I told him no, I was upgraded months ago, but I had to switch to this flight due to a delayed upcoming flight.
The female flight attendant felt TERRIBLE. after breakfast was served she insisted I eat her meal, I declined and told her I can just take something from the BYOB in economy. She would hear nothing of it, and insisted I take her french toast with sausage. She made my table and gave me breakfast. She was so apologetic the entire time.
what a fantastic FA! She really made me feel special and she actually truly cared! Something you don't see very much of anymore.

So who knows, even if you have the ML*1 on your BP, and there are no more meals loaded you may still end up lucky.
