Appreciate all the feedback.
Yup there are some decent cheese shops in Vancouver as I suspect there are in the UK, etc. We occasionally pick up stuff from Les Amis du Fromage locally which does import.

Sure, I can probably find almost anything locally (price-quality/convenience tradeoff) but I just want to haul some crazy stuff back (and boy have we've lugged some crazy, impractical stuff back during trips) and wasn't sure if the softer cheeses would make it. Might still give it a go but more in terms of an experiment without high expectations that it'll make it back to our kitchen.
[Don't worry, we've got other somewhat more practical and unique stuff on the list too. ]

BTW, love the soft cooler idea in general though due to it's limited space requirement and general usefulness while traveling. Usually bring one during road trips but haven't during a trip overseas.
