Simply not true. I have had special meals ordered and received upgrades at the gate at LHR (both EVIP and Op-Up). It means that you wont have a business class special meal but if you tell the FA that you upgraded from coach they can usually find your coach special meal and will serve that to you if you prefer...
I am gluten intolerant and I can tell you that AA business class is not very friendly. For me it is just an allergy and I can make do, but for celiac, I wouldnt eat much of anything from the regular menu....
