Why? The end result would be the same. The food in Wetherspoons is crap. I mean, if they can't even cook chips correctly, there's really no hope for them.
They obtain the cheapest possible food they can, to be able to serve it at low prices. Your sausages will have had some meat waved at them at some point in their life, but won't compare with proper sausages (think the rubbish all too often served at hotel breakfasts to keep costs down). Fish will come in pre-frozen, with all the attendant problems on that (afterall, they couldn't cook chips).
If you don't care about the rubbish you eat, then Wetherspoons is fine. As someone who has had to eat in Brewers Fayre type places way too often in their life, I have no expectations of actually enjoying food there - except in a guilty 'this is oil and fat and starch laden in a guilty pleasure unhealthy kind of way and I'll just ignore the taste' way. My personal choices when eating in such places is to always try and go for something deep fried - less to go wrong. And I eat there because sadly, in some places, there isn't much else and one does have to eat.
