Bring an empty water bottle with you and then fill it at a fountain after you go through security. Then you can have all the water you want with you on the plane. Of course, this only works in airports where there are water fountains - fountains are not very common in European airports.
At some European airports (PRG, AMS) they will not let you bring bottled water (or other liquids) on the aircraft, even if you purchase it at the airport.
