First Time to the Caribbean - Looking to travel in May

Hello!

Me and my wife are planning to go to the Caribbean for about a week, most likely May 15-22 from Chicago. We have never been to the Caribbean, and would like to make our first time a memorable one. We're looking for a great scenic beach i.e. white/pink sand, crystal clear turquois waters, etc. We mostly want to lounge on the beach but would love to do activities such as sailing, jetskiing, and see what local activities are out there. Also, we would love to eat lots of tropic fruit, both me and my wife love mangoes and it would be great if we could try out all the different varaties. Our budget including airfare is roughly $600-$700 per person, because I'm hoping for good deals in May. I'm also quite interested in the all-inclusives..any recommendations??

Also, is there a big issue with insects during that time of the month? We would hate to wake up in the middle of the night and have to fend off big/ugly/hairy insects. Mind you, we're comming from Chicago and dont normally have to deal with these things.
