I would have just given the Apple employee the finger in a rather rude and loud way, and then left the store. If the Apple employee tries to detain you then happily wait until the real police show up-- you should then be able to file false arrest charges against the employee.

When people tell me that I can't do what I want with a device that I own, I have no problem getting rude-- and physical, if necessary-- with them.
