I am 100% positive that you will not find any first class reward seat on this flight because NZ does not offer first class on any of their aircraft
I believe I read somewhere that if you book a first class reward and can't get a first class seat on a plane but one becomes available at a later date you can grab the seat without any change fees. Can someone confirm this for me.

I believe that is correct, but only if you a) have at least one segment of your itinerary confirmed in first / business class (in order to issue a first / business class reward ticket) and b) the flight on your desired date has reward space available in a lower class of service the agent can book you into.
