Easyjet doesn't serve our area but I've flown RyanAir a lot with mine.

I do opt for the early boarding. I know it's a rip-off but they don't do family boarding and it's open seating. Once, I had to really fight to get us together and after that, I pay the extra fee so we don't have that stress.

Luggage is my biggest headache on RyanAir. It's really tight and I'm careful as overcharges are expensive.

They don't accept car seats on board so I arrange car seats at our destination somehow. They forced me to check mine once and I wont take that chance again (never a good idea). They wouldn't allow gate-checking. For London, we didn't need a seat anyway.

Otherwise, it wasn't a big deal and I think Ryan Air is worse than Easy Jet as far as ease-of-use when it comes to low-cost companies. Look into the above issues but if I can survive flying alone with three small kids (the first time they were 18 mos, 3 and 5 at the time), you'll be fine with just one.
