I once flew the Airbus in F LHR-HKG - never again. The seats and IFE were awful. The Cathay web site is still showing a 3-Class Airbus A340: -

Anyhow, I always go for the 744 now, the F cabin feels much more private and relaxing - especially if you're sitting at the front. Unlike the 777 and Airbus the galley and toilets are behind you, making for a more peaceful flight.

Everyone has their own taste. Personally I've never had a decent meal on CX, I can only vouch for my own experiences. The only thing they get right IMO is the garlic bread and chocolates

My understanding is, notwithstanding certain language capabilities (Japanese, Korean etc) and outport-based crews, CX FAs can fly on most any route they're rated to fly that specific aircraft on. They then trade around slots with one another based on days/routes they want. But it's a little far-fetched to think that, either from some stroke of luck or intention that CX has Thai female FAs for LHR and HK males on CX253. CX F FAs are very intl as you point out (where as the younger ones in J and Y seem to be mainly from HK), but alas I have never seen racial types per flight as mentioned. On recent F flights to North America I have seen a consistent mix of HK, Korean, Phillippinos, Malaysian, Japanese and Thai. I can't speak for CX253, but I would suspect it is the same.
The last 6 times I've flown HKG-LHR in F i've been served by HK Males and Thai females. It makes for a great flight as I can speak some Thai and a little Cantonese. Perhaps this was a stroke of luck as you say.
