I will join with ether and jeffreyt in highest praise of Twist. The food is in no way "gimmick-y" - creative combinations of flavors and textures, yes - "trend-oid gastronomic flippancy", not in any way.
Like ether, the burst of flavors from the first of the five "langoustine-five-ways" preparations is a sensory taste experience that I will remember for a long time. And I've never had a better preparation of venison in any other restaurant.
The cuisine is enhanced by the exquisite service and the physical elements. You are made to feel completely relaxed, as a truly honored guest without the tiniest hint of obsequiousness or stiffness.
Note: My waiter (Jason, outstanding) told me that M. Gagnaire will be returning in May, possibly on or around the 24th.
