Admittedly, not with A380s, but certainly 737 and smaller aircraft are frequently boarded by walking across the apron and up a set of stairs.
There is always the "bus gate" thing, which has included some 747-400s... pretty sure the one time I did LAX-HKG, it was via bus. Granted you only get a few feet of apron on either side with that, but it's still something.
