If you are interested in lounge access/breakfast at these properties for all 3 people, you'll need to book for three.
Not surprisingly, the issue of 3 adults in the room is not the problem that the Hilton web site makes it out to be. Book the double room (not on an AP or non refundable rate) and contact the hotel directly; often times they can ovverride the max 2 adults default setting.
