DC-10 is the original 3 holer from McD&D. The MD-11 is a redesigned version of the DC-10... it's stretched, 2 person, glass cockpit, has winglets, longer range, etc. Introduced in the late 80's, production ended just a couple years ago. Although the MD-11 never was the passenger carrying success it was supposed to be, cargo operators have found it to work nicely in their operations, hence most MD-11s are starting to under go cargo conversions (AA's MD-11s are going to FedEx for example), and are known as the MD-11F.

The MD-10 is a conversion program for older DC-10s. They get unwanted, used DC-10s from airlines such as AA and UA that have much life left in the airframes, fly them to Goodyear, AZ and convert them into cargo versions. While slapping a cargo door on the side they also rip out all the wiring and cockpit and refurbish all the systems. When they are finished, they have a 2 person, glass cockpit (DC-10s had 3 person, 'steam cockpit'), with all brand new systems on board. The new MD-10 is only to be used by FedEx at the moment.
