Make sure to book appointments for tastings, and if you have specific requirements, then see if they will offer a private tasting... when you are lumped together into a group its harder to get things tailored.
I think if you're going at the end of May you'll have a much better chance of more private tours, especially at the smaller places. Besides our trip to Bodega Lopez (and I'm sure the other large producers like Trapiche) even our "group" tours consisted of one other couple at most.
If the websites don't have specific tour times then you can generally get a pretty private tour. I know we were by ourselves at Benegas, Hacienda, El Lagar, Clos de Chacras and CarinaE.
