I guess that I will just have to take a trip to Hong Kong to enjoy nice views of the city. I was imagining that there might be views landing at the airport, but I see that like many other cities, landing at the airport seems uneventful.
Given the approach from southern destinations (including BKK) the only way you can have a chance to see the city while you land is to sit on the LEFT side of the aircraft. The right side won't do you any good - if you land on 7L, you won't see the city regardless because the approach never goes over the city (although generally you can get a quick view of Macau). If you land on 25R, however you will pass over HK Island and will make a hard left turn over it. Hence, the left side will work.

In summary, for your approach if you land on:
7L: No chance of HK city view. Brief Macau/Zhuhai view if sitting on left. This is the predominant runway for landings right now.
25R: HK city view on left of aircraft.
