Even if you don't have a specific machine to suggest, could I do all this with a netbook? Are there some minimum specs in terms of memory, speed, power, software that I would need?

Yes you could, especially if the netbook is going to be plugged in. I have been using my netbook as my only machine for about a month when I destroyed my 17 inch laptop out of frustration. If you don't use an external DVD drive (netbook doesn't have one built in) the battery will last longer. Invest in a long life battery and you are good to go even on a trip. Currentlu my battery meter shows 7.5 house left hours of charge left while it has been unplugged for about half an hour. You don;t even need to buy an external DVD drive to install software from CD/DVD or write to one. I use the DVD drive on son's laptop, to install software on mine. His DVD drive is mapped on to a network drive.
