The closest MTR station to this hotel is University, which is a 2-3 min walk from the hotel. However, the airport express train does not run to this station. You would have to take the airport express to Kowloon or somewhere else and then transfer back to the regular MTR and go back to Sha Tin. This would take over an hour and I wouldn't advise it.

What I would recommend is taking the coach bus that leaves from the airport. They actually have some sort of agreement with the Hyatt Sha Tin so that the charge would be billed directly on your hotel invoice. The website is http://www.skyexpress.com.hk/eng/about.php and it costs $100 HKD and $175 HKD for round trip. I would book this when you get to the airport because this is some sort of special fare in agreement with the Hyatt Sha Tin that you can get at the counter at the airport. Normally, it's $120 for one way to the New Territories.

Also every time I've taken it, the Hyatt Sha Tin has been the first stop. It's a pleasant 35-40 min ride.

In terms of an early check in, I'm sure they'll try to accomodate you, but like any hotel, it will depend on availability that day. You can always contact them beforehand and request it.
