The 4 seasons in Wanchai is pretty nice. Location wise, pretty much everything around you will close around 10pm (with the exception of some restaurants and LKF). They have two great 3 star Michelin restaurant at the 4 seasons (but be prepared to pay the price). If you want a more vibrant scene, I would suggest Peninsula or Intercontinental on TST side. The views are amazing and Jordan/Mongkok is usually open till midnight and the restaurants are open well into the am.
Just a correction, Four Season is at Central next to IFC Mall.
