Advice ref ExpertFlyer and BA Sale

I wonder whether any EF expert can interpret this for me:

I want to book 2 x kids (over 12 years so adult fares) in Economy in July/August; already have a 2-4-1 in place so flights are fixed.

'Sale' prices are moving around but mainly upwards so I guess I should book now and lock in the sale price which is BTW very high for California ie year round fares are around £400 but July/August is £650. OK, I know it's holiday time but ....

Anyway, the outbound selling class is V and the inbound is S on BA's booking page for these flights.

So, what I don't understand is EF is showing both classes on both flights as available so why does BA.com book into different fare buckets? I assume there are different fares attached to the different fare buckets so which one is cheaper?
Does it make any difference if I call BA - I'm overseas at the moment or I would try it! What about classes N & Q ?
