Except we are also learning fixed tipping charges are now only a floor; and not a ceiling as one also gets dunned to add just a little bit more for special service. Good way to put the incentive back in and raise over all prices at the same time.

Good service is in the soul of the provider. It is not something that is done simply for money. It is given first, regardless of later reward because it suits the provider first and that is how they themselves want to find meaning in their own lives. Otherwise, they should be working somewhere else outside the hospitality business.
