Agreed. The best is probably the full service place near the main food court on the non-Schengen side, but it isn't anything special. On the Schengen side, the Grand Cafe is okay, but again not great. Personally, I like the McKroket at McDs, but most find it absolutely disgusting (breaded, deep-fried gravy on a bun).

The lousy food at AMS is the only thing that keeps it from being a truly great airport.

Sadly, 3-1/2 hours isn't long enough to go downtown.
