Thanks everyone for your feedback. In the end, I decided on the Grand Formosa Regent. Hope it's the right choice.
I generally try to avoid Hyatt hotels whenever I can ( unless it's a Park Hyatt ) due to repeating past bad experience when staying at this chain in other places. Also, the Hyatt Taipei hotel rooms looks really old.
