This is a red herring. It doesn't matter. I'm moving next week and gathered my personal documents yesterday and happened across my California Marriage License. Nowhere on the license does it state my wife's new name. The issue of her changing her name or not is not the issue.

OK, there's never 100% agreement on things. Even simple stuff. That's just the way it is. A handful of posts above I wrote what I'd recommend saying to the airline. I'd even recommend asking the agent to put a comment in her PNR that says "PAX getting married, maiden name XXXX". I don't know if they can/will do this, but if it helps then great.
Great. Call Cathay. They're the only ones who can really address this issue. The only other thing to do other than has already been written above is you should have her make sure she's given something at the time of the ceremony saying she got married. IIRC, California didn't mail the license for >4-6 weeks until it was filed with the courts.
