Indeed. The HIX are pretty much the same all across the country. Small but functional room, shower and toilet. Maybe a bar and limited snacks but vending machines in the foyer and often located near a generic low rent pub / eatery.
Continental breakfast included in the rate although it's coffee out of a machine and a few pastries so don't get too excited
The HIs can vary in quality and upgrade experience - maybe a silly question but
SimpleManToo, have you checked the Priority Club Experiences thread in the sticky at the top of the page? If you do a search it might throw up a few reviews of hotels you're looking for.
If you're looking for a higher end hotel in Edinburgh you won't have too much trouble - there are a few decent boutique hotels about (but you have to sacrifice your point earning ability there I'm afraid).
